Recipe: Indian Egg Curry


Ingredients:
2-3 Tbs Vegetable Oil
1 Medium Onion, Chopped
1 Green Bell Pepper, Chopped
1/2 tsp Black Mustard Seeds
1/2 tsp Fennel Seeds
8 oz Yogurt
4 Boiled Eggs, Halved Lengthwise
2 tsp Chicken Masala
Salt to Taste


1.  Heat oil in pan.  Pop seeds and add onions and bell pepper.  Fry onions and bell pepper, stirring regularly until  dark brown- being careful not to burn.


2.  Put in blender, add chicken masala and salt.  Blend into paste.
3.  Pour paste into pan, add yogurt, and mix thoroughly scraping sides. Add eggs, cut-side up.  Spoon curry over eggs.  Once curry begins to boil, turn down heat, and allow to simmer 5-10 minutes.
4.  Serve over rice.
